Air Fryer Beef Roast
Recently I made a delicious beef roast in my new Deluxe Air Fryer from Pampered Chef. It was so nice and juicy. My roasts usually come out more medium, to medium well. This one was closer to medium rare. I was so happy! My husband was really impressed with it too, which is always a plus. :)
The night before I cooked it I rubbed it with some salt, pepper, onion powder, and the garlic & herb rub from Pampered Chef. Then I put it in a sealed container and let it marinate in the refrigerator overnight. When it came time to cook it I used the rotisserie attachment and made sure to set the air fryer to rotate. Then I used the custom setting on my air fryer setting it to 390 degrees for 15 minutes. This was to "sear" the outside of the roast. After that I set it to 350 degrees for 40 minutes. (20 minutes for medium rare, 25 minutes for medium well.) My roast was 2.5 lbs, but I think next time I'll only cook it for about 30 mins after the sear time.
The potatoes were simply small red ones that I sliced up a bit and placed on the bottom pan in the air fryer seasoned with a little salt & pepper. Otherwise they just cooked in the drippings from the roast cooking above.
